Preservative and Antioxidant
Acidifying Effect: Most spoilage bacteria and pathogens thrive in neutral or slightly alkaline environments. Citric acid lowers the pH, creating acidic conditions that inhibit microbial growth and extend the shelf life of foods.
Synergistic Effect: When used with other preservatives (such as potassium sorbate), it can enhance their preservative effectiveness. Antioxidant: When processing fruits and vegetables, citric acid can chelate (encapsulate) metal ions (such as iron and copper), which can catalyze oxidation reactions and cause discoloration and flavor changes in food.
