2,3-HEXANEDIONE is a yellow oily liquid. It has a sweet creamy aroma (weaker than diacetyl), with notes of cream and cheese. The boiling point is 128ºC. It is slightly soluble in water and soluble in propylene glycol, ethanol, and oils.
