Allyl hexanoate, also known as allyl caproate, is also called pineapple aldehyde or ananas aldehyde and nonadecanal. It is a colorless to slightly yellow transparent liquid with a strong pineapple-like fruity aroma and a rum-like flavor. Natural products exist in pineapples and others. Pineapple aldehyde is recognized as GRAS by FEMA. The FEMA number is 2032 and it is approved for consumption by the FDA. In China, GB2760-1996 stipulates that it is a temporarily permitted edible flavor. It is widely used in formulating fruit-flavored flavors such as pineapple, apple, apricot, peach, sweet orange, strawberry, etc., and wine flavors such as rum and liquor.

1.Allyl caproate can be widely used in the preparation of food and tobacco flavors, especially in the preparation of pineapple and other fruit flavors, and also in the blending agent of artificial flower essential oils.
2. It can also be used to prepare pineapple, apple, apricot, peach, sweet orange, strawberry and other edible flavors and wine flavors; it can also be used in daily chemical flavors such as brandy, wood fragrance, cologne, etc. Generally 210mg/kg in chewing gum; 32mg/kg in candy; 25mg/kg in baked goods; 11mg/kg in cold drinks.
